Quick & Simple Tomato Recipes

We’ve been calling the month of August “Tomato Month” due to our mountain of late-season tomatoes that have been rolling in the door.

Our daily (quick) lunches have been tomato sandwiches, and it’s fun to see the juice running down the kids’ chins.

If you have your own garden and like us, have a ton of tomatoes that you can’t keep up with, here’s 2 quick recipes to help.

Bruschetta

5 medium tomatoes
2 teaspoons finely diced garlic
2 tablespoons finely diced red onion
1 1/2 tablespoons olive oil-plus extra for bread
1/2 teaspoon salt
French of Italian bread-sliced 1/2” thick

Directions:
Mix together and refrigerate. Lightly brush the bread with olive oil and toast under broiler. Top with tomato mixture and serve.

Tomato Basil Pie

Pie crust (I use a refrigerated box crust)
1 cup mayo
3/4 cup mozzarella cheese
1/4 cup Parmesan cheese
Fresh basil, to taste
Garlic, to taste
8 tomatoes, chopped

Directions:
1. Place pie crust in bottom of pie pan
2. Place chopped tomatoes in bottom of pie crust.
3. In a separate bowl, mix together the basil and garlic. Top the tomatoes with your mixture.
4. In another bowl, mix together the mayo, mozzarella and Parmesan.
5. Top pie with mayo and cheese mixture.
6. Bake at 350* for 20 minutes
