Garden Fresh Tomato Soup

As we began this post, we realized that in August of 2019, we also gave out some simple tomato recipes. ‘Tis the (tomato) season! You can find the 2019 post here.

We love homemade tomato soup, but have never made it before due to thinking that it would require our entire tomato harvest. But it doesn’t! No matter where you are finding your fresh and in-season tomatoes, we recently found a good recipe that the whole family loves. We even doubled the recipe and canned some for winter. This is on the table in 30 minutes or less, and it’s perfect for a quick lunch or relaxed dinner.

Ingredients:

4 cups chopped tomatoes
onion, to taste
garlic, to taste
2 cups chicken broth* (see note)
2 TB butter
2 TB flour
salt, to taste
sugar, to taste

Directions:

  1. In a pot, combine tomatoes, onion, garlic, and chicken broth. Bring to a boil and boil gently for 20 minutes to combine flavors.

  2. Remove from heat and process through a food mill into a large bowl. Discard tomato remains.

  3. In same pot, melt butter and add flour. Stir & cook 1 minute.

  4. Gradually whisk in tomato mixture to avoid lumps. Season with salt & sugar.

    *If you follow our recipe for homemade pastured chicken broth, it is very nutritious and flavorful. We found that homemade broth can easily overpower this recipe, so start with less broth than called for. You can always add more if desired, or use a 1/1 ratio of broth and water.
