Family Style Pork Nachos
Meal planning means there’s always a “Mexican Night” on the board, and these nachos were a great shakeup from the standard tacos that the kids also enjoyed. Just a handful of ingredients and this skillet comes together in about 30 minutes.
Ingredients:
1 pound breakfast pork sausage
1/2 yellow onion, diced
8 oz. cream cheese, room temp
1/2 cup sour cream
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon cumin
about a cup of salsa verde
2 cups shredded cheddar cheese
tortilla chips, avocado, queso fresco
Directions:
Preheat oven or grill to 375*
In a cast iron skillet, add sausage and onion and cook thoroughly.
Meanwhile in a separate bowl, mix together cream cheese, sour cream, and spices.
Add cooked pork mixture to cheese mixture, stir in salsa verde.
Using the same skillet, add a base layer of pork mixture, layer tortilla chips on top, followed by shredded cheese.
Repeat this until pork mixture is gone, adding a final layer of shredded cheese.
Cook about 20-25 minutes, until golden brown on top.
Serve with avocado and queso fresco if desired.
