Pasture Raised Pork Sausage Breakfast Hash
When you have minimal ingredients but still need a delicious meal to come together in under 30 minutes, make the HASH. A balanced bowl of protein, veggies, and carbs that is all customizable to your liking.
Ingredients:
diced red potatoes
bell peppers
mushrooms
zucchini
onions
Instructions:
Brown the sausage in a cast iron skillet until browned, remove from pan.
Add diced red potatoes to the same skillet with a bit of olive oil and add a lid, cook until tender (alternatively you can put the potatoes in your air fryer for 20 minutes at 400*).
Remove the potatoes, and add remaining ingredients. Season with salt, pepper and garlic if desired.
Combine all ingredients after cooking for a protein packed bowl.
Serve with an over-easy fried egg (the runny yolk and crispy potatoes are a superb combo), or a bit of sour cream if desired.
